History and Development
Cellini's roots go back to 1925, when Amleto Pieri began working as a broker for green coffee on the Italian market. His son, Sergio Pieri, continued his father's work as a coffee roaster. As a connoisseur of the espresso tradition and quality, within a few years he assumed a leading role in supplying Tuscany's gastronomical trade. In 1992, Giovanni Pieri decided to take the Cellini brand in an international direction in order to expand the company. Thanks to his many years of experience in the international coffee business and his weakness for original Italian espresso, Lutz Quasdorf, co-owner of Cellini SpA, was able to offer valuable support for this project.

Production
Due to the growing popularity of Cellini products, the existing production facilities of the roasting plant were no longer sufficient. This is why the management decided to set up the new roasting plant in Genoa in mid-2005, accompanied by great public interest and the enthusiasm of the company's employees. Today, Europe's most modern roasting plant operates in an area of over 11,000 m2. Certification in accordance with ISO 9001:2008 and IFS confirms the roasting plant's compliance with high standards. Green coffee warehouse, roasting plant and packaging lines are all vigorously monitored by our Quality Control department. 

Roasting
To maintain Cellini's quality philosophy, the cost-intensive drum roasting process called "Tostatura Lenta" in Italian was adopted in the new production facility. This fast roasting process is economically more cost-effective. The drum roaster, with roasting times of between 15 and 18 minutes, carefully and slowly refines each Cellini coffee bean. This process guarantees enjoyment because the beans are roasted through thoroughly and equally. Green Coffee Selection and Quality Control Perfection down to the smallest detail, that's the standard according to which we manufacture our Cellini Espresso. That's why we only process the highest quality of green coffee varieties from the best coffee-growing regions in the world. Before a coffee bean can become a Cellini bean, it has to pass several strict quality checks. Once it has been roasted, the coffee is tested again for colour, moisture content, acidity residues in the packaging and the correct granulation for the ground blends. Behind every Cellini blend there is an ideal, complex recipe with one sole purpose: to create excellent coffee with an intensive aroma, the right level of acidity and a well-balanced taste.
